These clay lid covers are locally known as "Dolma Tasi" in Turkey. These weighted cooking press stones are generally put on the Dolma dish or stuffed grape leafs dish while it is cooking, to prevent the disintegration of the dish while it is being cooking and provide a secure way to cook. When you cook these dishes by closing the ordinary lids on the pot, the plate prevents the taste from circulating in the food homogeneously. In addition, the bubbles trapped under the plate cause overflows and distortion of the form of the meal.
